Hobo Cheese Co.

Hobo Cheese Co. is a seasonal, grazing dairy that makes cheese from March to December. Hobo only uses fresh, raw milk from their own herd of cows, and crafts every (small) batch by hand. To preserve its structure and native microflora, they handle their raw milk gently, agitate it minimally, and never store it for more than 24 hours. Each batch of Hobo cheese is a one-of-a-kind vintage, capturing the flavors of its own moment in time.
